Collagen Hydrolysates
Collagen hydrolysates in nutraceutical and food applications
Today's consumers are increasingly aware of the benefits of nutritionally enhanced foods, and PB Gelatins’ SOLUGEL® products can help provide the functional and nutritional properties necessary to prepare new, innovative and healthy food products. Collagen hydrolysate is a purified protein that does not contain any carbohydrate, fat or cholesterol. SOLUGEL® are valuable sources of amino acids, essential to the performance of sports enthusiasts. For example, they contain arginin which aids muscle metabolism, and glutamin which is beneficial in combating metabolic stress. Protein hydrolysates, such as SOLUGEL® 5000 and SOLUGEL® 2000, are also easier for the body to absorb and utilise than both free amino acids and whole proteins. These products are therefore excellent sources of the amino acids needed to enhance quality of life. SOLUGEL® also have functional characteristics that are key to new product development. The desire for convenience products has resulted in the evolution of the protein and energy bar market. SOLUGEL® help serve two functions in the development of protein bars:
- As a source of high purity protein while maintaining the desirable soft texture.
- The combination of the amino acid profile and the molecular weight of the protein helps increase the shelf life of the bars and improve customer satisfaction.
As a result of these characteristics, food technologists have been able to enhance the quality of sports protein, granola and energy bars.
Collagen hydrolysates in other applications:
Cereal bars (binder), tablets (binder), wine and juice fining, spreads (texture, viscosity), dairy drinks (viscosity, mouthfeel), micro-encapsulation (vitamins, flavours), protein fortification.
PB Gelatins has several grades of SOLUGEL® products, with application ranges from strictly functional properties to nutritional fortification.
PB Gelatins’ collagen hydrolysates can be supplied as acid or alkaline types.
