Cold Soluble Gelatins

The (hot) dissolution step, necessary for applying regular gelatine, is a limitation to some applications. For that purpose, PB Gelatins has developed a complete range of cold soluble gelatins CRYOGEL® and INSTAGEL®.

While CRYOGEL® has to be pre-blended with other ingredients, as it would otherwise form lumps, INSTAGEL® can, as the name implies, be used without pre-blending. These types of gelatins are particularly interesting in applications where it is an advantage to omit the heating/dissolution step in order to obtain a faster, more convenient, simple way of preparation, while keeping the functionality of regular gelatin. Application examples are instant powder desserts, cream stabilisation, gateaux, mixes for bakery and sauces.
